Once upon a time, the Texas Longhorn was the king of Beef in the Wild West and the cowboys who drove them up from Texas became the universal folk heroes that we still revere to this day. The Texas Longhorn is a symbol of the beef industry, and an important part of North America’s history of Food. So where’s the beef?  Well although the Texas Longhorn is a symbol of the beef industry in North America, the fact is that Longhorn beef is no longer a part of the mainstream beef industry. Why? Because Texas Longhorn beef takes longer to grow. Bigger, fatter, quicker growing cattle took the place of the leaner Texas Longhorn due to basic economics. Fortunately these amazing cattle can be found on a select few ranches scattered across North America, and with our new understanding of health and nutrition the Texas Longhorn breed is winning us over once again.
